I have a 1993 hilux with a 1uz,link ecu,& manual trans.Does anybody no the best exhaust to use for best offroad drive ability,torque,etc?

Talk to your exhaust shop.. I would say ?? Twin 2" exhaust ...
The std manifolds when cut up don't look like they would flow too well..
Some extractors should wake it up in higher rpm..

For off road we generally run twin 2 1/4 into single 2.5. Works really well and keeps the noise down which is important if we want to maintain good relations with landowners and other users.
