I'm no truck expert (even though I own two Chevy Suburbans), but it sounds like it's low end "grunt" that you want. For that, I'd be looking for a 2UZ-FE, instead of the 1UZ.

The 2UZ comes out of the Tundra trucks here in the US, and it has 4.7 litre displacement, cast iron block, and a VVTi setup that a tuner can probably tweak to give you even more grunt out of it than Mr. Toyota did.

It should be a very nice engine for low down torque, but it has the weakest rods of the UZ family, so don't try any nitrous or supercharging until you change the rods.

Sorry, I just realised this didn't answer your question about flywheels, but if I were you, I'd go with a heavy flywheel. None of this lightened ally stuff; you probably want/need lots of moment of inertia to keep the engine from bogging.

I had a stock UZ in my Rover.

I used a modified Rover Flywheel for a while and it was around 12kg and seemed to let the motor spin up well but it still had a nice fat bottomend.
