Engine & ECU swaps are always challenging when your not familiar with the conversion.
Have you connected your laptop to the ECU? You should be able to monitor the connected sensors.
Failing that, you need to trace the sensor wiring to see where / if they are connected. Its normal for most engines to have 2 or more coolant temp sensors. One used by the ECU and another for the dash instrument. The ECU needs to know engine coolant temp so it can control your fuel and ignition, so if the engine runs and car drives fine, the coolant temp will most likely be connected and doing its job.
The oil temp sensor (assuming one's fitted) may not be connected to the ECU as oil temp will most likely not be used by the ECU.
A wiring diagram would also help.
